Pumpkin Bread

This most delicious and simple pumpkin bread recipe is perfect for Fall.


3 cups sugar

1 cup oil

4 whole eggs

2 16 oz cans pumpkin

3-1/2 cups flour

2 teaspoon baking soda

1 teaspoon salt

1 teaspoon baking powder

1 teaspoon cloves

1 teaspoon nutmeg

1 teaspoon cinnamon

1 teaspoon allspice

1 cup raisins



Mix the first 3 ingredients well. Then blend in the rest of the ingredients. Bake at 350 degrees for 1 hour and 15 minutes. Oil the pans before filling. Use 2 bread loaf pans. Makes 2 servings. Cut the ingredients in half for 1 serving. Also, replace raisins with chocolate chips or add chocolate chips for a sweeter taste or use less sugar for those who prefer less sweetness in their bread.


The “great PUMKIN” BREAD

1 1/2 cups  flour
1/2 teaspoon of salt
1 cup  brown sugar
1 teaspoon baking soda
1 cup  pumpkin from can
1/2 cup  Olio Beato Olive Oil - Extra Virgin - Organic
2 eggs, beaten
1/4 cup water
1 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon allspice
1 teaspoon ground ginger
1/2 cup chopped walnuts (toasted in oven for 15 minutes)
1/2 cup raisins
1 tablespoon of apricot or fig jam
2 tablespoons apple sauce

1 Preheat oven to 350°F (180°C). Sift together the flour, salt, sugar, spices,  and baking soda.
2 Mix the pumpkin, oil, eggs, 1/4 cup of water, jam and apple sauce
3 Combine with the dry and wet ingredients. Do not over mix.  Stir in the nuts and pour into pan of your choice.  

Bake for 40 to 50 minutes or until center in done.
