Sulawesi Toraja (Celebes): Many people still refer to this coffee as Celebes, yet the Indonesian government changed the island's name when the republic won independence shortly after World War II. Coffee processing has since expanded aways from the Kalosi area of the island to include all of the Toraja region. Sulawesi Toraja offers an exquisite, full-bodied, syrupy smooth flavor with spicy aroma. Sumatra Blue Lintong: This rare coffee is grown near the town of Lintongnihuta, south of Lake Toba, in north-central Sumatra. So named for its distinctive blue color before roasting, the Blue Lintong is a fascinating coffee, offering smooth flavor in a full-bodied, low acid cup. Its lulling, earthy aroma is indicative of a quality Lintong. Sumatra Mandheling: This, the most commonly available of Sumatran coffees, shares many flavor characteristics with its other Sumatran cousins, but it isn't premium priced. full body, low acidity and a relatively mild aroma are characteristic of this bean's brew.
