• The San Moritz is fully forged from one piece of high carbon, no-stain steel.In 2000, Messermeister launched it's new elite edge on the San Moritz line. The elite edge is created by an exclusive three-step sharpening, followed by hand polishing of the edge. The elite edge makes the San Moritz the sharpest forged knives on the market today.

• The backs of all San Moritz blades are smoothly polished for comfort and safety.
• Chef's knife blades are cambered to provide fatigue-free rocking action
• The thick extension on the forged bolster is removed and polished to allow easy resharpening.
• The polyoxymethelene (POM) handle is the strongest available. It will not crack or warp.
